Basa and Prawn Burgers with Beetroot Salad
Makes 4 Burgers, Takes 20 minutes, tops.
Put 1 fillet of basa, 100g of prawns (peeled!), 4 sliced fresh lime leaves, 2 spring onions, small bunch of coriander and 1 lime’s zest into a mixer and pulse until the fish protein binds the mix together, about a minute. Shape into burgers and fry in coconut oil until brown on one side then turn and repeat, 4 minutes or so either side. Finely slice the beetroot leaves and toss in a bowl with the grated beetroot. A little sesame oil, lemon juice and soy sauce to dress the salad. Heap beside a burger and finish with a dollop of chilli jam.
