I am not a big fan of fennel. But this week instead of waiting and waiting to cook it I decided to use the bulb I had in my medium bag almost immediately.
I thought the BBC Good Food fennel and lemon risotto sounded like the kind of dish I wouldn't mind having on a Friday night. However Ben wasn't sure about using lemon and fennel together. So he tweaked the recipe a little bit. He removed the lemon and used more parmesan than prescribed in order "to offset the strong fennel taste". Also we used shrimps instead of prawns as it is more sustainable.
