It's nothing complicated but it received the seal of approval of several friends who tried it -three, to be accurate.

The idea is, instead of grating the carrots, you cut them in long, thin sticks. It gives a nice texture to the salad.

I advice you prepare all the dry ingredients, mix them and prepare the vinaigrette separately.

Ingredients (for 2 portions):
-4 small-medium carrots
-1 spring onion
-some feta
-some pumpkin seeds
-some fresh parsley
-some vinaigrette (cider vinegar, olive oil, salt and pepper)
